Building a Weeks Worth of Meals

So in the beginning of the week I like to pick a meat and build as many meals as I can from that one piece of meat. On monday I bought a 2lb. Pork Loin and cooked it for 5 hours in the crock pot.

I rubbed it with minced garlic, salt and pepper. I put it in the crock pot with red wine, onions, soy sauce and dry onion powder.

Today I decided to make tacos with it because thats what I do with just about everything. I made guacamole with pickled sweet corn, white onion, tomato and cilantro, pickled radishes (my first time making these) and Sriracha (my favorite hot sauce) When I reheated the pork in a skillet I put Trader Joe's Island Soyaki sauce to give it a sweet flavor to contrast the other salty flavors. I pretty much love every taco I ever make but these knocked my sox off.

I still have about 3/4 of a lb of meat left after my lady and I have both eaten 2 meals with the same pork loin that cost $12
